National Buffalo Wing Festival

Mark your calendar's for this year's 18th Annual National Buffalo Wing Festival, held in downtown Buffalo each Labor Day weekend.

From the Festival Website:

Celebrating our 18th Spectacular Year

AS WE ENTER INTO OUR 18TH  YEAR, the festival is recognized as one of the best in the country. In 2018, the festival drew over 60,000 people. Over the last 17 years, the festival has drawn more than 865,000 people and served over 4.8 million wings. The festival, which also supports local charities, has donated more than $365,000 since its inception.

So, “WING IT TO BUFFALO” and join us for the fun and excitement at one of America’s greatest food festivals this Labor Day Weekend – The National Buffalo Wing Festival!

The idea for the festival came from a movie called Osmosis Jones. Bill Murray starred as a compulsive eater with a goal of attending the Super Bowl of junk food, The National Buffalo Wing Festival.  Ironically, there wasn't one. That is when native Buffalonian Drew Cerza, now affectionately known as the Wing King decided to make it happen back in 2002.  This is a case of Real Life knocking off Hollywood!

This year's Wing Fest is scheduled for Saturday August 31st and Sunday September 1st.

Commodity costs favorable for chicken wing chains in 2014

Mark Brandau, Nation's Restaurant News

At the start of 2014, commodity prices for traditional chicken wings are trending down from 2013, and certainly much lower than the record highs of 2012 — but industry watchers and operators warn that price deflation is fleeting and that wing chains need to keep their menus as dynamic as possible. “If we look at the past five years and the trends against wings, it’s a roller coaster, and what’s moving the needle is supply and demand,” said DeWayne Dove, vice president of purchasing for SpenDifference, a Denver-based supply chain consulting firm.  “A lot of concepts will jump in and get good deals on spot buys, and when those are gone, you’ll see pressure on the market.”

The Origin of Buffalo-Style Chicken Wings

As noted on The Anchor Bar website:
On a Friday night in 1964, Dominic Bellissimo was tending bar at the now famous Anchor Bar Restaurant in Buffalo, NY. Late that evening, a group of Dominic's friends arrived at the bar with ravenous appetites. Dominic asked his mother, Teressa, to prepare something for his friends to eat. They looked like chicken wings, a part of the chicken that usually went into the stock pot for soup. Teressa had deep fried the wings and flavored them with a secret sauce. The wings were an instant hit and it didn't take long for people to flock to the bar to experience this new taste sensation. From that evening on, Buffalo Wings became a regular part of the menu at the Anchor Bar. The phenomenon created in 1964 by Teressa Bellissimo has spread across the globe. Although many have tried to duplicate Buffalo Wings, the closely guarded secret recipe is what makes Frank & Teressa's the proclaimed "Best Wings in the World."
